Chinese Spring onion pancakes

Ingredients:

  • 900g plain flour

  • 450g hot water

  • 3 tablespoon cooking oil

  • 3 spring onions, finely sliced

  • 1 ½ teaspoon salt

Method:

1.) Dissolve salt in hot water.

 

2.) Stir water into flour and knead until it is smooth, then continue for another 4 minutes.

 

3.) Rest dough for 10 – 20 minutes.

4,) Knead the dough out into 10 large, thin circles.

5.) Brush cooking oil over the top and sprinkle with spring onion.

6.) Roll up into a cylinder and then into a snail shape, then roll into circle again.

7.) Brush cooking oil into a hot medium sized pan, add pancakes and cook until golden on each side.
