Savoury Bread Pudding
500g stale sourdough or country loaf
8-10 sage leaves
100g grated cheese
Salt and pepper
2 cups finely chopped kale
1.) Preheat oven to 180 degrees and generously oil a large baking dish.
2.) Cut bread into 2.5cm squares and place bread in baking dish.
3.) Slice leek and kale thinly and wash. Dice tomatoes finely.
4,) Heat a large saucepan over medium heat with olive oil, and cook leek and kale until soft for around 8 minutes.
5.) Add herbs, then place greens and cheese in dish with bread cubes and drizzle with olive oil.
6.) Beat together eggs and milk, seasoning well with salt and pepper, then pour this mixture over the bread and allow to sit for 15 minutes, then bake in oven for 40 minutes until golden.
