Roasted Cauliflower,

rice + pea salad

Ingredients:

Salad:

  • 1 large / 2 small heads of cauliflower

  • 2 cups rice

  • 500ml stock

  • 400g frozen peas

  • ½ bunch coriander leaves

  • Olive oil

 

Dressing:

  • 120g frozen peas

  • ½ bunch coriander leaves

  • 2 cups Greek yoghurt

  • 2 teaspoons honey

  • Olive oil

 

Method:

 

1.) Heat oven to 200 degrees.

 

2.) Cut cauliflower into florets and put on baking tray, drizzled with oil. Roast for 20-25 minutes.

 

3.) Cook rice over medium heat in stock, then once cooked fluff with a fork.

 

4.) Defrost peas and drain well.

5.) In a blender, combine all of the dressing ingredients, adding olive oil as required.

6.) Combine all salad ingredients in a large bowl, season with salt and pepper, then fold through dressing.
