Greens, Pretzel + Tahini Salad

Ingredients:

Salad:

  • 1 large bunch kale

  • 250g broccoli

  • 2 small apples

  • ½ cup pretzels and / or seeds

  • small bag shaved parmesan

 

Dressing:

 

  • 5-6 tbsp lemon juice

  • ¼ cup tahini

  • ¼ teaspoon salt

  • 3-5 tbsp water

 

Method:

 

1.) Very finely chop the kale and broccoli.

 

2.) Dice the apple.

 

3.) Add vegetables to large bowl.

 

4.) In a small separate bowl, whisk lemon, tahini and salt. Whisk in water 1 tablespoon at a time until it is desired consistency.

 

5.) Pour dressing over vegetables and toss well, then sprinkle with parmesan and seeds or pretzels.
