Fresh zucchini Salad
2 tablespoons mixed nuts or seeds
1 small packet parmesan
1 ½ cups mint leaves
¾ cup olive oil
2 garlic cloves
Juice of 1 and ½ lemons, rind of 1 lemon
1.) Very thinly slice zucchini using a peeler or mandolin.
2.) Season with ¾ teaspoon salt and leave to stand for 2 minutes.
3.) Drain well and pat dry with paper towel, then place in medium sized bowl.
4.) Place mint, lemon, oil and garlic in blender and blitz until fine.
5.) Pour over zucchini and toss together.
6.) Place seeds over low heat in a small saucepan and cook for 3-5 minutes.
7.) Pour seeds over salad and sprinkle with parmesan.
