Sweet Potato Mac 'n' cheese


  • 500g sweet potato

  • 1 teaspoon nutmeg

  • 60g butter

  • 2 small brown onion

  • 6 thyme sprigs

  • 1kg macaroni

  • 2.5 litres stock

  • 400g cheddar

  • 400g parmesan

  • Olive oil

  • Salt + pepper

  • Handful chopped herbs




1.) Heat a large saucepan over medium heat. Add olive oil.


2.) Chop sweet potato into small cubes, and finely dice onion.


3.) Add sweet potato to saucepan with a pinch of salt and a splash of water. Cover and cook for 5-6 minutes.


4.) Take the saucepan off the heat and add nutmeg, stirring with wooden spoon to break up sweet potato. Remove sweet potato and set aside.


5.) In the same pot, add more olive oil, the butter, onion and thyme and place over heat for around 5 minutes until onion is soft and golden.

6.) Add the pasta and stock, stirring to combine. Cover and simmer until pasta is al dente.


7.) Turn heat to low, add sweet potato, cheese and stir to combine. Season with salt and black pepper.
