70's rice + apple salad

Ingredients:

Salad:

  • 4 cups cooked rice

  • 2 apples

  • 2 red onions

  • 2 green capsicum

  • 2/3 cup raisins

  • 2/3 cup parsley

 

Dressing:

  • ½ cup olive oil

  • 2/3 cup white vinegar

  • 4 teaspoons curry powder

  • 2 tablespoons caster sugar

  • 2 garlic cloves, crushed.

  • Salt and pepper

 

Method:

 

1.) Cook rice according to instruction on packet.

 

2.) Finely dice onion, capsicum and apple.

 

3.) Roughly chop parsley and raisins.

 

4.) Place these ingredients in a large bowl and toss.

5.) In a small bowl, add dressing ingredients and whisk until combined, seasoning with salt and pepper.

6.) Pour dressing over salad and toss well to combine.
